Description
Whole chicken is a classic that rewards patience. The breast and thigh have different ideal temperatures, making it challenging to hit both perfectly. Measure in the thickest part of the thigh, without touching bone.
Resting
Whole chicken should rest at least 10 minutes under foil after cooking. The large mass means carryover cooking is more pronounced, and the temperature can rise an additional 2–3°C during resting.
⚠️ Safety
For food safety, authorities recommend that chicken is cooked through to a core temperature above 70°C, preferably 72–75°C, to kill any bacteria.
